Hummus + Peanut Butter = genius!  Why didn’t I think of this before?!!

I first experienced this stroke of brilliance at Fremantle’s Whisper Wine Bar where friends Dom, Jac, Rhiannon and I met for bubbles, giggles and nibbles before enjoying an amazing gig by Paul Dempsey at the Fly By Night Musicians Club.  Great weather, great friends, great music, and really great Peanut Hummus!  It’s highly likely that I will now associate Dempsey with Peanut Hummus forever more and that’s not necessarily a bad thing – both are deliciously special in my book.

I decided that I needed to wow my family with this rock-and-roll dip as part of our Christmas celebrations.  It was ridiculously quick and easy, and even had the grandparents impressed!

To make 3 cups:

  • 2 cans organic chickpeas – one drained and one undrained
  • 1/4 cup raw peanuts
  • 1 tbsp olive oil
  • 1/4 cup lemon juice
  • 1 clove garlic
  • 1 tsp ground cumin

Blend all ingredients in a food processor until smooth, serve and enjoy!   🙂

Now, where did I put my Dempsey CD……..?

    OH! I was also at this gig. Lovvvvvvve love love love 🙂 I would love to try some peanut hummus!
