It was my birthday the week before last.  YAY, I love birthdays! Fancy drinks, presents and cuddles, oh my!

Is that why I found myself staring into space at 10am the following Tuesday, daydreaming about cake and drooling on my keyboard?

mmmmmm, licking the spoon after making a fresh loaf of banana bread…  Sweet, sweet, cinnamon, banana, walnut, vanilla heaven, I love you…♥

Well, like the mature and sophisticated woman I am now (*ahem*), I decided to take matters into my own hands and create a healthy version! Because let’s face it, we’d all be drinking cake batter straight from the bowl every day if our skinny jeans would let us.

It took two batches to get it just right (who you callin’ Piggy?), but here it is in all its glory, ready to share!

Healthy enough to drink every day and delicious enough to elicit a raised eyebrow from your Lovebug who won’t believe you haven’t poured cake batter straight into a glass…

Vegan Sparkles Banana Bread Smoothie

Banana Bread Smoothie

Prep Time 10 minutes
Total Time 10 minutes
Servings 2

Ingredients
  

  • 2 cups non-dairy Milk Soy/Almond/Cashew/etc
  • 1/4 cup Walnuts
  • 2 large very ripe Bananas, frozen
  • 1 tsp pure Vanilla Essence or a few vanilla pod seeds
  • 1 tsp Ground Cinnamon
  • 1/4 tsp All Spice
  • 3-4 Medjool Dates pitted
  • Dash of Sea Salt
  • 2 handfuls of Ice

Instructions
 

  • Pop all ingredients into a high-speed blender and blend on high until smooth and creamy.
  • Pour into glasses, sprinkle with a little more cinnamon, and enjoy!

    Hi, love reading your blogs and making your recipes, but I notice that you put a bit of sea salt in a lot of them… can you tell me why? Im not afarid of salt, but it seems strange to put it in a ‘sweet’ recipe… Thanks 🙂

      Hi Jodi! A tiny dash of salt enhances the flavours. I use pink Himalayan Crystal Salt (never white table salt) but you can definitely leave it out if you prefer. 🙂

    This sound delicious! I wonder whether I could substitute something in place of Walnuts? Are the Walnuts essential to the taste? Would some sort of seed work? I’m not allergic but at this time I’m anemic and am trying to get my iron levels back up to normal levels. If you can offer an alternative, that would be great. Thank you.

      Hi Dawn! Walnuts are an excellent source of iron and they do add a lot to the flavour of this smoothie, but you could try substituting with pecans or just leaving them out altogether.

    I like the banana bread in a glass – it sounds like it should be bad for you, but is actually all good! A nice answer for the champagne hangover!

    My mouth is watering at the thought of this. So clever. Whenever I need a chocolately treat I blend up frozen bananas with soy milk and cocoa powder. So good! Frozen bananas are the BOMB.
