No-one could ever accuse me of being naturally Martha Stewart-like. I’m forever accidentally ripping or breaking things around the house during my many enthusiastic ‘projects’. I have burnt silk shirts with the iron, caught oven mitts on fire, and sewn buttons on back-the-front.
I have vastly improved in this area lately but it’s precisely because I was born without this gene that I so respect and admire practical, domestic goddesses who instinctively know how to bake, sew and mend. This Apple Cupcake idea originally sprang forth from Martha and I fell in love with photos of it on blogs such as Oh She Glows and Blondie Bikes & Bakes and couldn’t wait to try it out. I mean, HOW CUTE ARE THEY?! Apple Cupcakes without cooking, with minimal fuss (and mess!), that taste delicious! YES PLEASE!
Simply halve and core an apple, and then top it! There are heaps of topping ideas out there but I stuck with Peanut Butter, with Goji Berries on one half and Raw Cacao Nibs on the other. Later on, I got even more adventurous and tried coconut toppings and Healthy Orange-Choc Jaffa Cakes.
Gorgeous, healthy, fun and sooooo yummy! And that’s my inner adult talking. Promise.

January 16, 2012 at 9:45 am (13 years ago)Ha. This was so cute, I had to go and make it immediately. I didn’t have anything fancy, so I just shmeared it with peanut butter and topped it with slices of banana. I made a terrible, glorious mess.
In other news, I’ll now be putting slices of apple on my peanut butter banana sandwiches! Yummy combo. 🙂
