This is a super fresh, super healthy, super delicious and super fun lunch you can pull together at super fast speeds on just those occasions. A superstar salad to save the day!
Pair it with sparkling white wine spritzers or a jug of Olive on Blonde’s Perfect Summer Gingernade, kick back in the sunshine and let the good times roll!
Starring:
- Tempeh
- Mushrooms
- Tamari
- Sesame Oil
- Fresh lime juice
- Fresh mint leaves
And your favourite salad ingredients, such as:
- Asian lettuce leaves
- Snow peas
- Bean Sprouts
- Avocado
- Red onion
- Cherry tomatoes
- Cucumber
- Carrot
- Did you know that tempeh and the cookie cutter were made for each other? It’s written in the stars. Pick your favourite shape and let them follow their destiny. ♥••*´¨`*•.☆•
- Heat a small fry pan over medium heat and sauté sliced mushrooms and tempeh shapes in a splash of coconut oil and tamari until cooked.
- Assemble salad ingredients, top with cooked mushrooms and tempeh, and drizzle with lime juice, sesame oil, tamari and fresh mint leaves.
- Enjoy!
