Of all my website addictions (and trust me, there are too many), One Green Planet is probably the most informative and beneficial to my overall wellbeing. I love their stories on animals and nature, lifestyle, science, and health, not to mention the incredible vegan recipes they feature. I’ve had my eye on this amazing recipe for a while now, and since I’m going craaaazy with the raw food this week, I thought why not get my raw dessert on!
To make seven cupcakes (I didn’t choose that number for any superstitious reason or anything – it chose me when I ran out of crust after seven), I used the exact Crust recipe, but then made only half of the Filling and Caramel volumes.
The resulting cupcakes were gooey, caramel goodness – and so healthy, you could eat them for breakfast! They sure beat the lolly snakes I often ate for breakfast B.V. (Before Veganism).
I was especially impressed with the caramel – it is soooo good. I don’t often have the time or patience to make recipes with so many steps, though, so next time I’m planning on creating another version of Apple Cupcakes - apple halves sprinkled with cinnamon and topped with the caramel sauce and sultanas. Ohhh yes. I have a hunch they will be just as tasty, with half the time and mess, hurray!
That leaves more time for website addictions and other important stuff…
