Ding ding, it’s finally SPRING!  Hurray!

Not only was Friday the last night of winter, it also featured a blue moon.  Freaky.  I’ll just take that as a sign that we’re about to head into the best Spring/Summer yet.  Are you with me?

To celebrate the farewell of winter and welcome back the warmth, my friend and I thought it appropriate to don our warmest (sparkliest) slippers, pop open a bottle of red vino and relax with a DVD and a spicy, home-made Mexican pizza.

I was all set to make Keepin’ It Kind’s Delicious Pizza Base Recipe when a couple of ready-made, vegan, gluten-free pizza bases threw themselves at me in a nearby shop.  Thank you blue moon, for saving me some time on a very rushed Friday!  I’ll make those bases from scratch next time.  Promise.

On top of the bases I splashed a spicy tomato salsa and then topped it with all sorts of Mexican goodies:

  • Mexi-Beans (you could also use Kidney/Pinto/Black Beans/etc – drained)
  • Fresh Tomato
  • Red Onion
  • Jalapeรฑo / Red Chilli
  • Mushroom
  • Capsicum
  • Fresh Corn

 

 
 
Yum!  So easy and delicious.  No queso required but it would definitely be better with home-made bases.

Once baked (at 180C for about 15 minutes), garnish with avocado slices and fresh coriander leaves and enjoy your movie!

    This pizza looks so fresh and delicious! I’ve never thought of putting avocado on pizza, but love me some avocado and Mexican food in general, so I will have to try this.

      Ohhhh, you’ve definitely gotta try the avocado on pizza trick! It adds so much smooth creaminess that you don’t miss the cheese (Jedi Mind Trick). NOM. ๐Ÿ™‚

    Avo on a pizza is a great idea.
    I see you have really well cooked crusts on the pizza. Thats my fav.
    I was thinking of making socca pizza crust before, have you tried it?

      Oh my WOW, I had never even heard of socca pizza crust before so I just googled it and now I WANT SOME, IMMEDIATELY! hehe. Looks delicious and I’m a huge fan of any recipe with only 3 ingredients. ๐Ÿ˜‰

    I’m so flattered that you wanted to make my pizza but I’m so happy that those crusts threw themselves at you! This pizza looks so great- the corn, the avocado, the peppers, the beans- I’m swooning!
