Claire’s also a Health Coach and I was lucky enough to first meet her when she came along with Emily to the Perth Wellness Babes hang out / fun day last year.

What inspired your health journey?

In 2003 I was diagnosed with acute liver inflammation and found myself in hospital, seriously unwell, overweight, tired and stressed. I was given the option of steroids and biopsies to potentially diagnose an autoimmune disease, but instead, I simply changed my diet, experimented with holistic healing therapies, downed a bucketload of vegetable juice and began to meditate.

After a few months of this healthy lifestyle change, there was no sign of inflammation at all in my body, I’d lost weight, my skin had cleared and all of my liver function tests were normal. Food as medicine, damn straight.

 

What’s the best thing about being a health coach?

The honour of working alongside women and cheering them on as they begin to listen to that little voice that says ‘hey you, you’re pretty special y’know – how about chasing down your dreams?’ is definitely the best thing about my job – I still have to pinch myself that I get to call it ‘work!’

 

How do you practice self-love / care?

Listening and tuning in to what my body needs in the moment.

Loads of energy? Let’s pound the pavement and follow it up with a solo brekky date.

Feeling more reflective? Hand me my journal and pen, stat.

A bit agitated or stressed? Let’s get outside and reconnect with Mama Nature.

Learning to listen – and I mean really listen – to my body and what it needs, is the biggest gift I have ever given myself and honouring that creates miracles.

 

What’s your favourite way to relax and unwind?

Is there anything more relaxing than cooking up a storm to some snazzy tunes? I’ll happily turn on some Fleetwood Mac, chop up some veggies and sip a glass of shiraz (while booty-shaking the shiz outa my kitchen), any night of the week!

 

What’s got your toes tingling with excitement right now?

I’m loving the new blog coaching I’ve been doing, which is super fun. My clients have been launching some incredible stuff into the blogosphere!

I’m also working on my first eBook which will be called ‘Get Unstuck’ and is due for a February 11th launch. It’s shaping up to be pretty spectacular!

Sensational Stuffed Tomato Halves

Prep Time 5 minutes
Cook Time 45 minutes
Total Time 50 minutes
Servings 4

Ingredients
  

  • 8 to matoes
  • 1/2 cup millet
  • 1 cup water
  • 1 onion chopped
  • 2 cloves of garlic chopped
  • 1/2 cup pine nuts
  • 1/4 cup LSA ground linseeds, sunflower seeds & almonds - available from your friendly health food store
  • 1/4 cup fresh thyme
  • 1/4 cup fresh oregano
  • Fresh basil to serve

Instructions
 

Millet:

  • Add millet and water to a saucepan on high heat. Bring to boil.
  • Give the millet a good stir.
  • Lower the heat and simmer with the lid on for 15 minutes or until water is absorbed. Give the millet a good fluff with a fork once it's done.

Tomatoes:

  • Preheat oven to 180C/350F degrees.
  • Cut tomatoes in half and scoop out the flesh. Place flesh aside.
  • Add the onion, garlic, nuts, tomato flesh and herbs to the cooked millet and simmer mixture for a few minutes.
  • Spoon mixture into tomato halves, spread evenly on a baking tray and sprinkle with LSA.
  • Bake for 30min or until tomatoes are cooked through.
  • Serve with fresh basil. Enjoy!
