Every time I go to a Farmers Market I wonder why I don’t go every week.  Yesterday was the perfect day for it.  The sun was shining, the air was fresh, I had a heap of small change and no other plans until Noon.  I gathered up my shopping bags and bribed my friend with promises of soy cappuccino and puppies, and we headed on down to get amongst it.

 

I need to prove myself to the Gardening Gods before I can be trusted with innocent plants like this, but how gorgeous are they?

 

The bounty!  Fresh, crunchy and delicious.

 

And my favourite way to enjoy it: Easy Roast Vegetable & Pepita Salad with Balsamic Dressing.

 

 

Sometimes the simple things are the best.

  1. Pre-heat oven to 180C.
  2. Chop vegetables (potato, sweet potato, red onion, baby carrot, capsicum, etc) into small pieces and place in a large baking dish.  Toss in olive oil and season with salt and pepper.  Sprinkle with pepitas and roast for about 45 minutes.
  3. Assemble salad vegetables (lettuce, cucumber, snow peas, grape tomatoes, mushroom, etc) on plates.
  4. Top with roasted vegetables and drizzle with balsamic vinegar.
  5. Enjoy!  xx

    YUM, my housemate just made a total bounty of roasted veggies with rosemary and olive oil. Sooooo good.

    And I totally hear you on the “every time I go to a farmers market I wonder why I don’t go every week”!

    If I miss a few weeks I’m always kicking myself.
