hehe, okay okay, before you get toooo excited, I have to confess that I didn’t make this dinner from scratch. I was in the David Jones Food Hall at lunchtime, buying one of their delicious salads, when I noticed that they had something new in their cabinet. Pakoras with a great big ‘Vegan’ sign on them! Hurray! David Jones speak vegan! I was so excited, I bought some immediately and skipped back to work with a big, cheesy grin (soy cheese, naturally).
My colleagues ask a lot of questions about veganism (especially when I’m skipping around the office looking all happy and loopy), like: “Isn’t it hard?” Sometimes, but mostly it’s fun! I love the adventure of it – of finding new foods and options where you least expect them. Like at David Jones. They also ask a lot of questions about the cost and amount of prep time involved in living vegan, but it has seriously never been easier, as more and more cafes and food halls get savvy with the vegan vibe.
I bought a bag of rocket leaves and a jar of corn relish on my way home and dinner was on the table in five minutes flat. As I munched on the sesame pakoras with leftover red rice and lentil salad from lunchtime, on a bed of rocket leaves and dressed up with corn relish, I thought about how fast, fancy, inexpensive and delish my vegan ’fast food’ was. And about that cute dress I saw in the window…
