Just like a sexy Superhero, the SuperSeed Stir-Fry will swoop down and save your body from the damage that the evil weekend junk foods try to inflict (yes, champagne and vegan cupcakes, I am looking at you).

When the healing properties and antioxidants available from mere vegetables, garlic and chilli aren’t enough, it’s time to call in the big guns.  Send up the Bat-Signal and get these Superfoods on your plate:

Chia Seeds are high in essential fatty acids, Omega 3, protein, soluble fibre, antioxidants, B vitamins, calcium, iron, magnesium, phosphorus, potassium, zinc, boron, and copper.  Chia seeds contain six times more calcium than dairy milk does by weight, and the calcium in chia seeds is more easily absorbed by the body.  Chia seeds have three times more iron than spinach, and fifteen times more magnesium than broccoli.  Kapow!

Quinoa is commonly referred to as a grain, but it is actually the seed of a plant related to beets, chard and spinach.  These amino-acid-rich seeds are not only very nutritious, but also very delicious, with a fluffy, slightly crunchy texture and a nutty flavour when cooked.  Quinoa is high in complete protein, meaning that it includes all nine essential amino acids, and is especially well-endowed with the amino acid lysine, which is essential for tissue growth and repair.  In addition to protein, quinoa features a host of other health-building nutrients including manganese, magnesium, iron, copper and phosphorous.

For two SuperServings:

  • a few splashes of sesame oil
  • 2 garlic cloves, crushed
  • 1 red chilli, seeded and chopped
  • a few splashes each of reduced-salt soy sauce and sweet chilli sauce (to taste)
  • 6 handfuls of fresh, chopped veggies of your choice, eg: sugar snap peas, mushrooms, red capsicum, carrot (spiralised) and broccoli
  • 1 cup of quinoa
  • a few sprinkles of chia seeds
  •  

  • Cook quinoa in a small saucepan of water, as per packet instructions.
  • Meanwhile, stir-fry the other ingredients (except the chia seeds) in a large wok .
  • Serve the stir-fry and quinoa with lime wedges and chia seeds sprinkled on top.
  • Enjoy feeling like Lois Lane all the next day.  ••*´¨`*•.

      Dang, I feel healthier already! This sounds like the perfect dish to get a vegan back on track after a weekend of champagne and cupcakes (or, in my case, buffalo seitan tacos and vodka 😉 )

        Absolutely! I went to bed feeling so happy and virtuous… but now it’s Wednesday and I’m thinking about champagne and cupcakes again! Or some of your cookies… mmmmmmm…. 😉
