The Alfredo ExperimentApril 29th, 2012 12 comments

 

hhhmmm, so it turns out some foods are much more photogenic than others.  The tough life of a Mad Scientist Food Blogger = sometimes you’re going to have to make a recipe two nights in a row, because the photos from the first night are so unappealing!  Vegan food is yummy!  I can’t have bad food pics on the blog! :-)  What this one lacks in presentation, it definitely makes up for in deliciousness, though, promise!

I used this ‘Alfredo’ sauce recipe, plus these measurements of veggies per person:

  • 2 handfuls of mushrooms, sliced
  • 1 spring onion, chopped
  • 1 handful of basil, chopped
Both methods began the same way:
  1. Make the Alfredo sauce according to the recipe linked above.
  2. Saute mushrooms and spring onion in a large fry pan.
  3. Cook spaghetti according to packet instructions.
  4. Add the Alfredo sauce and chopped basil to the mushroom mixture and stir thoroughly.

Method 1

  1. Drain spaghetti and add it to the mushroom and sauce mixture.
  2. Mix thoroughly to coat the spaghetti, and attempt not to splash it all over the kitchen.
  3. Divide into small pasta bowls and attempt not to splash it all over the kitchen.
  4. Serve topped with fresh basil, pine nuts, and sun-dried tomatoes.
  5. Clean up the splashes all over the kitchen.
Method 2
  1. Drain spaghetti and divide it into small pasta bowls.
  2. Top spaghetti with the sauce mixture.
  3. Serve topped with fresh basil, pine nuts, and sun-dried tomatoes.
Results
Method 1: tested on two omnivore males (usually the harshest vegan food critics), who both loved it and swore it tasted just like a regular creamy pasta.  Photos were awful.  Kitchen was destroyed.
Method 2: tested on a vegan friend, who also loved it.  Photos were slightly better.
Conclusion
Success!  Go with Method 2, though.  Prettier and much less messy. :-)

  1. I hate it when that happens! Photos are the backbone AND face of a recipe blog. The other thing I hate is when I finish making everything, it’s dinnertime and everybody’s starving, and I serve the food, COMPLETELY forgetting to TAKE the pictures….and the chance is gone. *sigh* That happened yesterday. lol

    • haha, it sooooo is! Especially with creamy sauce dripping from every surface in the kitchen and friends yelling for their dinner!! ;-)

  4. Ha- I think my boyfriend expects cold food all the time because I always have to take a few dozen photos before he can eat!

    • haha, I can so relate! I have also been known to stop friends from eating their dinners in restaurants until I can get a good shot! ;-)

  5. I hate it when the photo doesn’t look nearly as appetizing as the food truly is! But–this looks divine and if my vegan alfredo experiment was anything like yours, I know that it tasted great! :)

  6. I end up cooking dinner on the weekends way early, to catch the best light… then we just snack on the food and aren’t even hungry once it’s actually time to eat! :)

    • haha, ohhhh the life of a food blogger! No wonder our families think we’re a little bit bonkers. :-) It’s still fun, though!
