I loved the look of this recipe and photo from The Copycat Cook and had every intention of making the sweet potatoes too. Really, I did. But when I tasted the chickpeas, I decided I’d rather just enjoy them on their own. They are that good.
This will definitely become a regular recipe. It was so incredibly easy and fast to make – the perfect mid-week dinner. Scott loved his with Naan bread, and I think I’ll add a side of Mango Chutney to mine next time, mmmmm… and did I mention gluten-free, nutritious and almost zero fat content??
For 2 servings:
- 1 tbsp olive oil
- 1/2 onion, finely chopped
- 3/4 cup fresh coriander leaves, chopped
- 1 clove garlic, minced
- 1 tsp grated fresh ginger
- 1 tsp ground cumin
- 1/4 tsp ground cayenne pepper
- 1/2 tsp ground turmeric
- 1 tsp paprika
- 1/2 tsp garam masala
- 1 cup crushed tomatoes
- 1 can organic chickpeas, drained
- squeeze of lemon juice
- In a large saucepan, sauté onion in oil until translucent. Add garlic and ginger and continue to sauté for 1-2 minutes.
- Add the spices to the onions and fully coat them. Cook for 1-2 minutes longer.
- Stir in the tomatoes and chickpeas. Simmer for 10 minutes.
- Remove saucepan from the stove. Stir in lemon juice and half of the coriander. Season with salt & pepper.
- Serve topped with coriander. Enjoy!

Ooooohh, Indian food. Nothing is better in my mind! And this recipe from the Copycat Cook sounds so flavorful and tasty. Mmmmmm, it’s only 7:30am and I already want lunch…and I want Chana Masala

Chana masala is one of my favorite foods! I look forward to trying your version. Unfortunately, my co-op doesn’t seem to carry garam masala any more and I’m out.
